

Banana Republic

This is intended to show off our upcoming banana liqueur, I’ve also included a large batch volume for a 750ml batched version that is prediluted and can just be poured over ice. This makes use of a red wine syrup which is just 1:1 ratio of red wine and brown sugar. It’s a great way of adding more flavour to a drink as well as using up oxidised red wine.

INGREDIENTS

60ml Aged Rum

30ml The Gentleman’s Coffee Liqueur

30ml Banana Liqueur

5ml Red Wine Syrup

2 dashes Bitters

BATCH INGREDIENTS
-
300ml Aged Rum
-
150ml The Gentleman’s Coffee Liqueur
-
150ml Banana Liqueur
-
25ml Red Wine Syrup
-
125ml Water
-
10 dashes Bitters

METHOD
This can either be made in the glass or if using a large ice cube can be done in a mixing glass over ice. Stir to combine and pour into a glass.
When batching this you can add water so it’s already diluted, simply pour over ice to serve. It can also be aged with toasted wood chips. Use a blowtorch to char the wood chips. Place the cocktail and the wood chips in a mason jar. Submerge in a sous vide immersion circulator at 65℃ for 2 hours. To increase the ageing, remove the jar from the water and place in an ice bath till it is room temperature, then repeat the sous vide process.
