

Red Right Hand

This is a variation of the Right Hand cocktail, itself a rum based variation on the Negroni. Plus the song is one of my all time favourites.
INGREDIENTS

1 part Aged Rum, play around with the rum as it can give it different flavours. I used Bumbu for the original

1 part Coffee Liqueur

1 part Campari

1 part Sweet Vermouth. I prefer this with a lighter vermouth such as Capertif

4 drops Saline Solution
METHOD
Can be made in the glass. Fill the glass with ice and add ingredients. Mix till chilled and diluted
VARIATIONS
You can play around with the rum or even add some bitters but my personal preference is to batch it and rapidly age with charred oak chips in a sous vide machine and then milk wash.
Use the same ratios as above and add to a mason jar. Toast the wood chips with a blow torch and add it to the jar. Bring up to 65℃ in the sous vide a couple of times for around an hour. Let it cool down in between. Mix some powdered milk according to the instructions on the package, about 20% of the volume of your cocktail, in a larger jug than the size of your batch. Pour the now cooled cocktail from the mason jar into your jug with the milk through a strainer to remove the wood chips. Stir the mix thoroughly and let it sit for about 30 minutes at room temperature. Then pour the mix through a coffee filter or cheesecloth. Bottle it and it will keep for weeks or even months in the fridge if you manage to leave it alone that long.
